Here are 3 successful recipes that taste great. Choose the recipe you would like to try based on the ingredients you have or flavour preference.
coconut "cheesy" sauce
[you can use with pizza, pasta, nachos and other savoury dishes]

200ml full fat coconut milk
3 Tbsp nutritional yeast flakes (non-fortified)
2 Tbsp tapioca starch or arrowroot powder
1/2 tsp sea salt (or to taste)
1/2 tsp onion powder (optional)
1/2 tsp garlic powder (optional)
1/4 tsp nutmeg powder (optional but makes big difference)
Whisk the ingredients in a pan and turn on the heat.
Bring to boil while constantly stirring
Let simmer on medium heat for a minute until stretchy
Notes:
You can add more milk if the sauce is too thick (any plant-based milk would work)
For a family recipe, I would double the ingredients.
cashew "cheese" sauce
[works great with eggplant lasagna, and as replacement for sour cream]

1 cup cashew nuts soaked overnight or soak in hot water for 1 hour
1 cup water
1.5 Tbsp nutritional yeast flakes (non-fortified)
2 tsp tapioca starch or corn starch
1 tsp garlic powder
1/4 tsp nutmeg (optional but makes big difference)
1/2 lemon juice
salt and pepper to taste
Add all ingredients into a high speed blender and blend until creamy and smooth.
simple "bechamel" sauce
[good for pasta dishes)

3 Tbsp butter (you can use vegan butter)
2 Tbsp flour (you can use gluten-free flour blend)
2 cups warm plant-based milk (Almond milk works great)
pinch of nutmeg (optional but makes big difference)
salt and pepper to taste
Melt the butter over medium heat
Whisk the flour until thickened and bubbling (about 2 minutes - don't let it brown)
Pour the warm milk and continue to whisk until sauce is thickened (about 3 minutes)
Add salt, pepper and nutmeg to the pan and stir to combine.
